                                                               Carrot Cake Cookies
  • When the Holidays start to approach we all kind of panic trying to figure out what's a good dessert to make that's different from the one we made the year before. A little treat after we have finished our meal is always nice to have, and Carrot Cake is delicious but Carrot Cake Cookies are even better. Makes your mouth water just thinking about those good Cookies that's not only good, but also an healthy treat to have.
  • 1/3 cup of Low fat Vanilla Yogurt, 1 tsp. Vanilla extract, 1 cup of Raisins,
  • 1/2 cup of Shredded Carrots (about 1 Large Carrot). Step 1. Combine Oats, Flour, powder, and Salt then set aside.
  • Step 2. Beat Spread, and Brown Sugar in large Bowl with electric mixer until Creamy.
  • Step 3. About 3 minutes beat in Egg, Yogurt, and Vanilla. Gradually beat in Oat mixture just until blended, Stir in Raisins.
  • Step 4. Turn dough onto wax paper and form into 7 inch- long logs. Wrap tightly, freeze until firm.
  • Step 5. Preheat oven to 375 for 2 servings, slice off four 1 inch rounds from log, then refreeze remaining dough until ready to bake.
  • Arrange frozen Cookies slices on the baking sheet, let stand 10 minutes. Bake 8 minutes or until edges are golden brown and centers are set.
  • Tips: Need more Cookies Slice then bake as many as you need using the above directions? Warnings: Cool 2 minutes on wire rack, remove from sheet and cool completely.
 
                                                                                                                                                                       

 
 

                                               Chantilly's 3 Meats and 3 Cheese's Jambalaya
  • Who doesn't like Jambalaya? Everyone just loves New Orleans traditional Jambalaya with all it's different spices it's so good, but after while you kind of get bored with the same old thing so here is a simple easy way to have the delicious, great tasting Jambalaya with a kick. If your a Meat and Cheese lover like I am then this is just for you, all the same great flavors that you love with three different types of Meat added with a little bit of Cheese in it. Hmmm sounds delicious huh, it's making me hungry well let's get busy making it you with me here we go?
  • Steps 1. In a 2 quart Pan add 2 - 3 cups of Water bring to a boil.
  • 2. Add 1 box of Zatarains New Orleans style Jambalaya mix (serves 6 people).
  • 3. Return the mixture and bring it to a boil, Add 2 tablespoons of Vegetable Oil/Olive Oil.
  • 4. Add 3 Cups of chopped up Chicken breast.
  • 5. Add 1 pound or 1 roll of Breakfast Sausage.
  • 6. Add 2 cups of cut up Polishes.
  • 7. Add 2 cups of Shredded Cheese or 4 pieces of Cheese slices (any kind you desire).
  • 8. reduce heat, stir, cover, and simmer over low heat for 20-25 minutes, Once done remove from heat and let stand for 5 minutes, serve.
  • Tips: If serving more than 6 people add a extra box of Jambalaya or use Rice, if you want spicy Jambalaya add a tablespoon of Cajun seasoning or 1 teaspoon of Paprika, or Cayenne Pepper. Try Pepper Jack Cheese for a spicier taste. Warnings: To much spices can give you Heartburn, and to much Cheese can give you indigestion.
 
                                                 

                                                                                                                                                                     



                                                                 Pork Tenderloin
  • We all get bored with the same foods eating the same stuff isn't any fun. Everyone loves Pork especially Pork Tenderloin it's an simple dish to make and you can make it so many ways. Grilled, Baked, Fried, and yes even boiled, Pork Tenderloin is a soft meat that can be marinated and when done very easy to cut. Port and the Fig Sauce will give the Pork Tenderloin a flavor that's not bland, your Pork Tenderloin will be flavorful.
  • 1 small red onion thinly sliced, 2 tbsp. port wine or Apple Juice, 1/4 cup dried Figlets, chopped or dried Cranberries or Cherries, and Thyme.
  • Step 1. Season pork with thyme and pepper.
  • Step 2. Melt spread with 12 inch nonstick skillet over medium high heat and cook port.
  • Step 3. Turn Pork once until done, remove pork to serving platter.
  • Step 4.Add Apples and onions to skillet, Cook stirring occasionally just until tender.
  • Step 5. Stir in port bring to boil over high heat, add apple juice and figlets. 
  •  Return to a boil, reduce heat and simmer covering 5 minutes or until apples, onions are tender.
  • Tips: Serve apple mixture over pork. Warnings: Let stand 5 minutes it will be hot.


                                                                                                                                                                      





                                           Smoked or Grilled Turkey or Turkey Legs.
 
When the Holidays come around we all get confused as what to cook, because sometimes you want something a little different. I know I do... You can still have the Turkey you Love for Thanksgiving, but lets grill it up some. Ingredients: 6 -8 Turkey legs 3 tablespoons Worcestershire sauce (optional) 1 tablespoon Vegetable oil I prefer Olive Oil, Dry Rub of your chose Wipe (mop) Rub on Legs BBQ Sauce of your chose as needed.
  1. Directions: Several hours before you Barbecue, let the Turkey legs thaw out.
  2. Combine the Worcestershire sauce and the oil, Coat your fingers with the mixture and rub into the turkey legs.
  3. Sprinkle the dry rub over the skin, liberally rubbing into the Turkey legs and under the skin. Place the legs in plastic bags and refrigerate while Legs Marinate.
  4. Prepare the Grill for barbecuing, bringing the temperature to 200 to 220 degrees F. Remove the Turkey legs from the refrigerator and let them sit at room temperature for about 30 minutes.
  5. Re-warm the mop mixture over low heat, transfer the Turkey legs to the smoker. Cook until the legs are very tender and the juices run clear, about 3 1/2 to 4 hours.
  6. rub or Mop the legs at 45-minute intervals in a wood-burning pit, or as appropriate for your style of grill or smoker.
  7. Serve the legs hot, to be eaten with your fingers, with barbecue sauce if desired.
  8. Dry Rub: 1/4 cup chipotle seasoning. 1 to 2 tablespoons mild dried ground red chili, paprika, Salt, pepper, garlic powder. 1 tablespoon packed brown sugar Mix ingredients together in a small bowl.
  9. Wipe: 1 cup white Vinegar 1 tablespoon BBQ Sauce 1 tablespoon Vegetable oil/Olive Oil Combine the ingredients in a small saucepan and warm the mixture over low heat. Warnings: be careful as it will be hot.
